Garlic Herb Roasted Potatoes, Carrots, & Zucchini
A delicious, easy, and healthy side dish packed with flavor! Ingredients:
2 cups baby potatoes, halved
2 medium carrots, sliced
1 medium zucchini, sliced
2 tbsp olive oil
2 cloves garlic, minced
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp paprika
1/2 tsp red pepper flakes (optional)
1 tbsp fresh parsley, chopped Step by Step:
Preheat the Oven:
Preheat oven to 400°F (200°C). Prepare the Vegetables:
In a large bowl, toss baby potatoes, carrots, and zucchini with olive oil, garlic, salt, pepper, oregano, thyme, and paprika. Roast the Vegetables:
Spread evenly on a baking sheet.
Roast for 30-35 minutes, stirring halfway through, until golden brown and tender. Garnish & Serve:
Sprinkle with fresh parsley and red pepper flakes (if using).
